SWEET POTATO PRALINE CASSEROLE 6 large or 8 small baked yams or sweet potatoes, cooled 1/2 cup of brown sugar 1 stick of butter 1/8 teaspoon grated nutmeg 1/8 teaspoon cinnamon 1/8 teaspoon allspice 1/2 cup cream 1 well beaten egg Praline topping (see below) Peel the potatoes and cut into 1½ pieces. Spread them out in a shallow baking dish, about a 9”x14” size pan works well. Melt the butter and add in the nutmeg, cinnamon, allspice, and cream. Remove from heat and add in the beaten egg. Pour the mixture over the potatoes and mix well, mashing some of the potatoes up and mixing a little more. Spread the mixture out evenly in the pan. Spoon topping over the potato mixture. Bake in a 350 degree oven for 30 minutes. Yield: 8 servings. PRALINE TOPPING: 1 stick of butter 3/4 cup brown sugar 1 tablespoon flour 1 cup chopped pecans 1/2 cup brandy Melt butter over low heat. Whisk in brown sugar, flour, pecans, and brandy. Mix until smooth over low heat.
